An potent, Pechuga Mezcal crafted by Mezcalero Adrian Bautista for Bozal Distilery NOM-O363X in Oaxaca, Mexico. It's made from wild Maguey Castilla sourced from the hillsides of Oaxaca & Guerrero using a copper still. During the second distillation, a lamb leg, alongside seasonal wild fruits and grains gathered from the local market, are placed within the bottom of the still in a basket. These wild fruits include strawberries, apples & pineapple, with additional components being pecans & ginger. It presents an aromatic beginning with notes of citrus, berries, tropical fruits, salt-cured meat, earth, nuts, herbs & spices; while a complex development introduces notes of pineapple, agave, smoked lamb, onion, strawberry, salt, ginger & ground pecans; leading to an oily finish of medium duration with notes of pepper, earth, smoke & sea spray.
