For Mardi Gras 2019, Bayou Rum introduced its limited edition XO Mardi Gras. This rum underwent six years of aging in bourbon and sherry barrels using the solera method. Sugarcane from a single estate in southern Louisiana is used for all Bayou Rum products, including this one.
