James Merino 2.3

I genuinely cannot comprehend the decision to strip the beautiful barrel color from an aged spirit, resulting in a pale, uninspired appearance. The 'white rum' designation on the label, combined with its appearance, led me to overlook its aged status. Initially seeking an unaged rum for bar use, I selected this unfamiliar distillery. However, the situation isn't entirely without merit, as it is at least matured in respectable used white oak casks. The aroma is predominantly molasses, but a cleaner rendition, with reduced sweetness and possibly a hint of citrus. The alcohol is slightly more pronounced than anticipated for an 80 proof. Subtle notes of vanilla and barrel sugar are detectable, indicating a nicely charred barrel, and hints of caramel-like bourbon characteristics emerge with distance. The initial flavor is very neutral, with a light and accessible body. The molasses is present but subdued. Instead of being dominated by the barrel or other notes, the neutrality persists until the alcohol intensifies, subtly affecting the gums. At this stage, oak notes appear, and charcoal becomes prominent through the finish. It's surprising that the palate isn't saturated with charcoal given the double filtration; however, it's evident that a range of flavors would be present had the unnecessary filtration been omitted. Angostura producing rum is unexpected, considering their primary product, but it makes more sense given the location. Perhaps a mix of this, bitters, and fresh citrus could salvage it, but that experiment awaits another time. Despite this slight letdown, I wouldn't rule out purchasing an aged Angostura rum out of curiosity, but I can definitively state this does not substitute for an unaged rum, nor does it surpass a genuinely unadulterated aged rum.
