I'm well past the halfway mark on this bottle, so I've had enough time to review this nicely crafted Anejo tequila. I initially thought the organic aspect would be novel and perhaps stray from the traditional methods I'm accustomed to. I was mistaken! It was so pure and full of flavor. No artificial or enhanced sweetness detected. The aroma presented green peppers, oak, and some vanilla. The flavor explosion delivered freshly ground pepper and citrus fruit/peel. A pleasant agave essence emerged afterward. Exceptionally smooth. It makes one anticipate the next sip. I'm now convinced about organic tequila. I hope more producers follow this path.

David Ravandi created Uno Dos Tres, an Organic tequila brand. The añejo expression, also referred to as "Tres" or 3, undergoes an 18-month aging process in white oak. This tequila is sourced from the Tequila Valley, also known as the Lowlands, and holds USDA and EU organic certifications.

123 Organic Tres provides a quality anejo tequila. Its slightly honeyed gold color and elegantly defined legs create a striking appearance in the glass. Rich aromas of vanilla and maple are complemented by notes of toasted nuts, figs, and oak. The flavors mirror the aroma with oak, black pepper, and spices, vanilla, nutmeg, and whipped cream, which is present in both taste and texture, along with a slight alcoholic dryness.
Mellow at first with caramel notes. A traditional bite with more mellowness on the finish. You can drink it or savor it. It's so excellent, I would savor it.
Tons of flavors from a winter pie: caramel, cinnamon, and allspice. It's extremely mellow and drinks quite easily. Just a little too sugary for my preference.
I wouldn't have identified the flavor as tequila!... or at least I wasn't aware of it!... it resembles Sotol or Tuxca.
Agave and new oak are perfectly balanced. Substantial weight on the palate with a nice, clean finish.
