About this bottle

The second Sourdough release from Westward Whiskey, this expression was created in collaboration with baker Ken Forkish. For this particular bottling, Forkish incorporated his French sourdough Levain in place of traditional pale ale yeast. This whiskey has been available exclusively to Whiskey Club members since August 2023, priced at $99.95 SRP.

Nose: super fruity and initially funky. The funk goes away a tinge as you sit with it. A bit of wood polish. Some malt dank/funk. Sourdough comes out here for sure! A bit of brown sugar. Palate: definitely getting strong barrel notes here, wood tannins come in to balance the sweetness from the mash. Some date, raisin. Has a mellow malt chewiness. Caramel. Slight nuttiness. A hint of green apple? Finish: drying with a tinge of brown sugar sweetness. Warming.

Nose: Yeasty notes with fruity and ester qualities, cooked dark fruits, and sourdough bread. Caramel and brown sugar are also detected. Palate: A little heat, with vanilla, caramel, a slightly unusual character, and a pleasant caramel apple fruit taste. Finish: Gentle heat and a light fruity quality.
