About this bottle

Umiki Whisky is a blend of Japanese malt whiskies made with Pacific Ocean desalinated water and imported grain whiskies. This no-age statement release is finished in Japanese pine barrels and bottled at 92 proof. "Umi" signifies "ocean" in Japanese, while "ki" means "tree." The whisky was introduced in the US and Asia in April 2020, with other international markets to follow in May 2020.

APPEARANCE Amber hue AROMA Notes of pine, honey, fruit, graham cracker, bananas foster, marshmallow, and a faint cake-like scent. The pine is quite prominent, but pleasantly so. It evokes the sensation of being outdoors on a mountain porch. TASTE A blend of banana taffy, pine, vanilla, graham cracker, wax, and a subtle sweetness with a hint of cake. This is not what I anticipated. The flavor profile differs significantly from the smell, though it's not unpleasant. FINISH A medium length with lingering herbal pine, caramel, graham cracker, grainy sweetness, and a touch of saltiness.

Nose: Pine, the sweetness of grain whiskey, and cherry hard candy. Palate: Savory notes, pleasant fragrant and sticky pine wood, a noticeable saltiness, caramel, and brown sugar. A hint of orange zest appears as it transitions to the finish. Finish: A finish reminiscent of bourbon/grain whiskey.

The aroma has notes of unseasoned pine and bright hard candy. The taste is like wildflower honey, reminiscent of Speyside, heavily infused with sawdust. It essentially tastes like drinking a young Speyside scotch in a lumberyard.

The bottle rotates! Also, it's good. The woody, pine-like taste is very noticeable. It was ranked 8th in the 2023 Birthday Boy Bourbon Tasting. (I placed it 7th.)
