I'm a big fan of cabernet sauvignon, it's my preferred grape, so while I didn't expect greatness from this given the reviews and price, I was curious if a standard effort could be elevated at all. The cask aging can't do wonders with the apparent lack of effort put into this, but I do appreciate the flavor profile, even though it has a distracting sourness at the end. It gave me an idea of what cabernet sauvignon could do for fine whiskey... which this is not. The base spirit is rough, the casks are too old or were used for too short a time, but I thought, man, I'd LOVE to taste a properly aged Springbank with cabernet sauvignon aging. I've had one amazing and one average cabernet franc from Longrow... has anyone tried any good cabernet sauvignon aging?
