12.2.22 Opened: Yesterday Served: Neat in a glencairn. With ice in a rocks glass. Last sip: Chicken Sausages. Aroma: Smells like apple cider vinegar and wet wood. Flavor: Mildly sweet. There's a pleasant piquancy from both spice and acidity that isn't overpowering. Very enjoyable on the first sip. A lingering cinnamon-like spice. It feels a bit like drinking a spice rack. Quite interesting, but a little muddled when neat. The spice level (from ginger) is just right to mimic alcohol. I'm impressed. It's certainly doing something different from other non-alcoholic spirits. Drinkable on its own, so cheers to them. In a highball: It requires a lower ratio than 2:1. It tends to get lost when there's twice as much club soda as spirit. It improved with Angostura in an old-fashioned-style preparation. This will be my standard way of serving it from now on.
