Aromas of pine forest, possibly cypress, are present. A smoky, herbaceous sweetness also comes through. On closer inspection, notes of cinnamon, apple, vanilla, cocoa, and a persistent briny smoke are detected. Taste: The flavors from the aroma emerge, joined by caramel and caramelized sugar. It's sweet enough to suggest creme brulee, then a peppery smokiness returns from the periphery. Tastes like an aggressive, spicy apple pie with baked spruce tips. Finishes with spicy oak, herbs, and apple pie. This is surprisingly superior to the Barrell line's ryes, perhaps even the finest rye I own. I'll regret finishing it. Excellent spirit.

Stellum Black represents an elevated line from Stellum Spirits, a venture by Barrell Craft Spirits. The rye whiskeys in Stellum Black Rye bottlings originate from Indiana, combined with older straight rye whiskeys from Kentucky and Tennessee. The Lone Cypress, named for a notable tree on the Monterey Peninsula, is a limited edition. Bottled at 115.39 proof cask strength, it arrived at select US retailers in December 2022. (SRP $99)

A distinct saline quality is present, paired with a subtle hint of invigorating pine. Quite intriguing, and it doesn't detract at all. Instead, it imparts an atmosphere of contemplation and wonder. It presents more higher frequencies than lower ones as it develops on the tongue. A leisurely drink with lively rye and an extended spicy conclusion. This would be outstanding in a Sazerac, we think.
Aroma: vanilla, herbaceous notes, and rye spice. Flavor: piney fruit, apples, and pineapple, with a hint of cereal and a spicy rye finish. This is enjoyable.
Sweet pine, spearmint, caramelized/candied citrus. A long finish with a perfect sweet and spicy sensation that lingers. A fantastic rye.
