Stellum Black Fibonacci Rye (Blend #1)

Nose: Deep, Rich, Complex. Honey-drizzled graham crackers. Black tea with lemon and orange. A lovely combination of light grassy rye and dark, almost pumpernickel, rye. Hints of spearmint, dark chocolate, and clove round out the profile. Palate: Heavy viscosity. Very oily. The blend of light and dark ryes and sweet butterscotch hits the front of the palate. The mid-palate features citrus-heavy black tea and mint. The finish is full of barrel char, cocoa nibs, and clove. Finish: Following consumption, a swelling warmth emerges and dissipates as quickly as it appears. It leaves behind rich tannins, milk chocolate, mint, and clove. Summary: A spectacular Rye blend. It's unclear why they are trying to sell it off quickly. Many retailers are offering it at one-third of the MSRP at the time of this review. If you encounter this, purchase one! Perhaps even two. Christmas is approaching!

Stellum Fibonacci Rye Blend #1. For anyone with an unopened bottle or who finds this on a shelf ***many retailers are discounting this as unfortunately Barrell and Stellum are not performing well despite some excellent releases*** I acquired this in 2022 and am just opening it now. My initial impression is that this is a truly exceptional Rye. A delightful aroma. A palate that fills the mouth impressively. And an incredibly flavorful and lengthy finish. The 115.12 proof is perfectly integrated. My rating: a very high 4.5 out of 5.

On the nose, it smells like pumpernickel bread with a hint of salt, spearmint, dill, and sugar. Taking a drink, the flavor was so surprising it made me pause for a moment. I've sampled many spirits, and few have had that effect. This is truly excellent. The palate offers a bready, yeasty character reminiscent of a cinnamon bun, complemented by caramel, toffee, and assertive savory notes—dill and possibly rosemary. The finish is extended, with spice and savory notes, where dill ultimately dominates. This is the sort of bottle that distracts me from bourbon, my primary preference, and draws me towards rye.

A sweet and spicy rye arrives upfront, bathing the palate in warmth with notes of caramel. The texture is quite full and moderately heavy, largely owing to its striking 115.12% proof. Diluting with a bit of water calms the intensity, uncovering a more subdued spirit with gentler hints of nutty bread, coffee cake, and pecan pie. This spirit offers continuous rewards. A single taste isn't enough. To mark the occasion of owning this bottle, consider a few ounces in an upcoming, unique Sazerac. Absolutely outstanding.

A quality rye, thick with vanilla, caramel, baking spices, and a subtle sweetness. It presents more herbal and eucalyptus characteristics than I prefer. Nevertheless, I will enjoy delicious rye Old Fashioneds, Manhattans, and Boulevardiers for some time. I'm shocked this is being sold off for only $25 a bottle!

Caramel sweetness. The lingering heat required 10 minutes of ice to become enjoyable. It's not bad, but I'm not particularly fond of it either. There's minimal spice, which I typically enjoy from ryes. I believe that's why I'm not a bigger fan of this.
