About this bottle

Stalk & Barrel Rye, crafted at the Still Waters distillery in Ontario, is made using 100% Canadian Rye grain. This distillery is the first grain-to-glass operation in Ontario in over a century, establishing its own tradition of single cask and single grain releases. It undergoes mashing, fermentation, and distillation by hand in small batches, followed by a minimum of 3 years of aging in ex-bourbon barrels. Currently, this product is only sold in Canada.

Benny Hitchcock 4.0

Very similar to their red blend, but with a chalky, dusty, leathery character absent in the red. Both share a powerfully sweet, peppery note and vanilla, yet the 100% rye is more potent, more floral, drier, and decidedly less sweet. The red blend presents a much creamier, sweeter aroma, reminiscent of Irish whiskey. At its extreme, the S&B rye offers an almond extract-like taste, with a dusty quality. Indeed, there's more rye spice present. An intriguing spirit; like the red blend, its uniqueness makes scoring difficult. Given the price, I'd suggest trying the red blend first, and if you appreciate the distinct vanilla/peppery rye, you will truly enjoy this.

Purchased my bottle at the distillery in early summer of 2015. This is a young whisky, but it's full of flavor. I had a taste while at the distillery but neglected to record my notes. My bottle remains unopened. I will update once I have opened and sampled it. I'm anticipating a release that is a bit older... perhaps 5 years? Additional time in the barrel should improve this spirit. Still Waters is producing interesting products here in Ontario!

Sweet aroma, but the palate is quickly hit with spice that persists to the end. Brown sugar notes mingle with the heat, creating a complex sweet and spicy sensation in my mouth. A few drops of water calm the intensity, revealing a subtle ash on the palate.

I have to agree with the previous notes on this one. Very aromatic, full of spice, hay, brown sugar and rye. A really good rye whisky. I'd recommend it to anyone who is a Canadian Rye enthusiast. I can't believe I found it for $55 on clearance at a local liquor store.

Enjoyed at a specific establishment with a companion, having an espresso. Fresh and clean. Light yellow in color. Smooth. Flavors of toffee and caramel. The finish has hot pepper and honey.
