About this bottle

Still Waters Distillery has carved out a niche in the Canadian Whisky market with its single-barrel offerings. This single malt whisky is produced using 100% Canadian two-row malted barley, which is hand-mashed, fermented, and distilled in small batches. It is subsequently aged in ex-bourbon barrels for a minimum of 3 years.

Isis Gaither 3.0

The initial impression is a young Highland single malt, but it's soon replaced by a powerful aroma of white grape and grappa. Notes of white frozen popsicles, plantains, sugar syrup, black tea, anise, barley sugar, and apricots emerge. There's also a hint of banana-flavored medicine. The texture is slightly oily and waxy, with a good body. It starts soft, but the heat escalates to a sharp white pepper. It's very juicy, with prominent white grape/grappa, honey, raisins, tea, plums, and prunes. The finish has a slightly herbal quality. It is clearly a very young spirit that needs more time to develop. However, it shows promise, indicating that the components and distillation are sound. It is hoped that future, older bottlings from this producer will achieve greater harmony.

Wow, that cereal note really comes through! So glad to find a single malt from my area (Toronto, Ontario). I visited the distillery and can confirm that "craft distillery" truly applies to Stillwater. They are clearly using their skills effectively with this one. Eager to experience an aged statement single malt when one becomes available.

It's a bit too harsh for my palate. There's a bold bite and a spicy character that brings rye whisky to mind. Not ideal for this evening's selection.

Terrible. It tastes more like vodka than a matured spirit. I should have opted for Canadian Club at half the price.
