Instead of my typical review process, I opted to sample this bottle right from the neck. I drank it neat in a glencairn after letting it rest for roughly 10-15 minutes. Appearance - Burnished. Smell - Freshly baked bread, orange zest, vanilla, and green apple. Taste - Caramel and brown sugar. Cereal notes are present. Vanilla. A hint of cinnamon spice. This is unexpectedly sugary. Aftertaste - It lasts a medium-long time. Vanilla, cinnamon, cherry/stonefruit, and cereal flavors persist. It reminds me of cinnamon toast crunch cereal, with a side of fruit and whipped cream. General Impression - I was hesitant about this one. Opinions on this bottle are all over the map. I'm also curious how it evolves after being opened. However, I find it to be quite good. It might not justify its $90 MSRP. But it's definitely enjoyable.

The third expression produced solely at Heaven Hill's Evan Williams Bourbon Experience (EWBE) in Louisville, Kentucky is Square 6 Wheated Bourbon. Under the direction of Distiller Jodie Filiatreau, this small-batch distillery has the capability to produce one barrel daily. This bottling features a blend of two wheated bourbon recipes, both aged before blending: one recipe contained 74% corn, 16% wheat, and 10% malted barley, while the second contained 68% corn, 20% wheat, and 12% malted barley. It is offered at 105 proof and became available at the EWBE and select Kentucky retailers starting in June 2023. (SRP $89.99)

The aroma is lightly grainy, rich with dark cherry, and presents a welcoming, familiar whiskey scent. On the palate, it aligns well with expectations for a wheated bourbon. It's easy to drink, has a medium body, a pleasant penetrating oak presence, and a slight tingle of spice and pepper. A dependable spirit suitable for sipping or mixing, particularly at its higher 105 proof. A very solid offering.
It was very obvious that this was a wheated bourbon. Having just had other Evan Williams bourbons didn't help my perception here. All I could taste were the previous two pours and bready wheat. I need to revisit this with a clear palate.
