The distinctive golden hue of Spring44's Old Tom Gin indicates its barrel-aged character. The Colorado-based distillery separately distills organic juniper, toasted coriander, orris root, galangal root, fresh grapefruit peel, fresh rosemary, and lemongrass. This blend is then aged for 2 to 4 months in toasted American oak barrels. Finally, the spirit is lightly sweetened with agave nectar before being bottled.

This gin is fantastic. While I don't typically go for gin, this has me completely captivated. It's wonderful in a mule with cucumber, and I've also been using it in my Tom Collins cocktails.
