From grain to glass, a Cask Aged Gin crafted by the founder of FEW Spirits Distillery. The base spirit has its foundational character removed before botanicals are added, including hops. It opens aromatically with black pepper, lemon zest, and a touch of pine. The middle presents a rich, spicy character with shortbread, ginger, pine, fennel, juniper, and berry compote. It concludes with a balanced finish of wood, gingerbread, and strawberry notes. July 2020

Incredibly intricate for a gin. This is my first barrel-aged gin. It's spicy and citrusy with pepper, then woody, leading to a warm vanilla spice finish... perhaps a hint of ginger? I had this neat at room temperature and would like to try it chilled. It would make a spectacular exotic martini, and I'm eager to try it in a G & T. I may need to reassess this rating over time.
