All apples used for this Cider Brandy (known elsewhere as Apple Brandy) are sourced from the Somerset region, with a significant portion coming from the brand's own orchards and the remainder from neighboring family farms. Up to 40 distinct apple varieties, including Tremlett's Bitter, Brown Snout, and Stoke Red, are utilized. The distillation process employs gas-fired, copper continuous-stills named Josephine and Fifi, capable of processing up to 2000 gallons of cider daily.
