About this bottle

Located on its namesake island in northwest Washington State, San Juan Island Distillery is situated just east of Vancouver Island, Canada. The island's climate is quite similar to that of Normandy, France, the region renowned for Calvados (French Apple Brandy). Their apple brandy production follows the traditional techniques employed in Normandy. Apple cider is distilled in their copper pot still in small, 50-gallon batches, heated very gradually to yield the highest quality apple eau de vie. A typical 4 to 6 hour distillation run produces approximately two gallons of pure apple spirit at 78% alcohol. The majority of this spirit is then placed in old 59-gallon French Limousin oak barrels for three years of aging. (Note: Currently, availability is limited to the distillery and select Washington state retailers).
