About this bottle

Sivó Le Single Malt is crafted from Quebec-sourced malted barley, ground at the Franklin, Quebec distillery. The single malt enters new oak casks for maturation at 62% alcohol by volume. It then undergoes a finishing period in former Sauternes wine casks before being bottled at 42% ABV.

Rich fruitiness, dried grapes, undertones of cinnamon and wood, remarkably smooth for its youth (likely under 5 years old, given the family's founding in 2014). The color is stunning, naturally so. Definitely worth purchasing! Well done, Sivo! Tasted again later, revealing fantastic scents once allowed to breathe for a bit. Color: golden amber Smell: initial notes of ripe fruit, dried grapes, and malt, followed by a whisper of citrus, then nutty character, almonds, evolving into woody notes, even a touch briny and savory Taste: dried grapes, sweet malt, citrus notes in the middle, then nuttiness, finishing woody and savory. Aftertaste: moderate, dry, and oaky P.S. Rating adjusted from 4.25 to 4.

On the nose there's some maltiness, shortbread cookies and a whiff of sulfur. The palate is more floral with the shortbread. Unfortunately, the slight sulfur note remains on the palate as well. The finish has some vanilla and perhaps a bit of wood? I was expecting a bit more from this young whisky given the excellent reviews so far. Maybe I got a bad batch?

Excellent complex flavor profile leaning towards sweet, fruity, woody, and vanilla notes. You ought to try it.
