Pear, fruity body. A bit thin and a bit of spice on the back end/ finish. Hint of cinnamon. Candy/licorice aroma. Flat/short aftertaste. Tasted in Stoneham... A friend bought for New Years 2019.

About this bottle
La Maison Sivo, situated in Montérégie, north of the Quebec/New York border, is part of Canada's expanding micro-distillery scene, which saw the emergence of at least seven new distilleries in 2015. Among its various spirits, the L'Essence du Single Malt Whisky is its premier product. It is made from malted barley grown in Quebec and aged for approximately one year in 225-liter Cornish oak barrels. Bottled at 42% ABV without filtration, it cannot legally be called "whisky" in Canada due to the minimum three-year aging requirement.

Excellent whisky if you enjoy fruity notes and Sauternes cask aging. It's like a Christmas Eve by the fire in a bottle.
