1/5/2022 Signatory vintage Deanston 2007 13yo 63.9% 1st fill sherry butt The primary characteristic is the musty fruitiness typical of Oloroso sherry, accompanied by continuous notes of oak and vanilla. The high alcohol content stings intensely, making deep nosing difficult. Initial taste offers a grape-like fruitiness. This is followed by a very spicy, impactful citrus, primarily with lemon nuances, and oak-derived spice gradually transforms into an oak aroma. The sensation fills the mouth with warmth. There are often floral hints. A grape-like hint lingers at the back of the throat, with overall astringency. A dark chocolate flavor, originating from the oak aroma, is noticeable but fades before the grape notes. The tannins are not strong; the spiciness persists longer. However, when left to breathe for an extended period, interesting characters like citrus quickly disappear, and the oak's influence disrupts the overall balance.
