A grand slam home run. I was eagerly anticipating opening this bottle of 125 proof NCF Sazerac. Everything is subjective, so if you appreciate Sazerac Rye to begin with and have enjoyed the 90 proof after chill filtration, as well as the 100 proof, there's a strong likelihood you'll enjoy this extra kick. Nose: Sweetness, spice, caramel, overall extremely pleasant with no hint of the proof. Palate: The mouthfeel is thick and extremely satisfying. More caramel and chocolate, some fruit, continuing the sweetness from the nose. Finish: Long, warm, and again, that sweetness carries through. I must award this a solid 4.25/5 and will revisit it as I genuinely want to rate it higher. I'm tempted to do so if I consider the price; this is a bargain and could be a daily drinker for any high-proof enthusiast, yet it offers an experience typically found in much more expensive bottles. I believe the 750ml bottle cost me around $31.00. I'm amazed that given the age and proof, this pour isn't hotter, as I anticipated significant heat throughout. Sazerac 125 has far exceeded my expectations, as I had hoped it would be a 3.75/5, or better, which is my rating for the 90 proof, and 4.0/5 for the 100 proof. A 0.25 increase isn't substantial enough to differentiate by score, however, I can confidently say none of the other Sazeracs come close. CHEERS!!!!!

Buffalo Trace Distillery produces this Kentucky-style rye, which is now a permanent addition to the Sazerac Rye brand, joining the standard 90-proof and the 100-proof expression released earlier in 2025. It is bottled at 125 proof (62.5% ABV) without chill filtration, matching its barrel entry strength. This expression will be available in select markets starting November 2025 (SRP $39.99).

Smell: Vanilla bean, cooked apples, rye bread Taste: Vanilla and citrus Aftertaste: Moderate aftertaste, with pepper, baking spices, and a bit of mint This is a solid choice for one of my preferred rye drinks. I like the six-year old 90 proof base release but the Full Proof version truly makes it much more intense. This bottling is intricate, strong, and has a nice slick mouthfeel compared to the original. As of this tasting I haven't had the opportunity to try the 100 proof release, but I will state that this might be one of the finest deals on ryes currently available.
