Cachaça Saliníssima has been produced at Fazenda Matrona in Salinas, northern Minas Gerais, since 1955, when Olímpio Mendes began cultivating sugarcane for cachaça and rapadura production. These were bottled and sold on-site to farm workers, neighbors, and acquaintances, while rapaduras were taken to town on Saturdays via ox cart. In the production process, Alfredo Mendes de Oliveira, Olímpio's son, managed the sugarcane transport and milling, while his father handled fermentation and distillation. By the late 1990s, Alfredo and his son, Lucas Mendes, assumed control of the farm, upholding the tradition of handcrafted production for both spirits and rapadura. In 2003, the facility underwent structural and equipment upgrades, preserving the artisanal spirit in its cachaça manufacturing. Today, Fazenda Matrona remains a significant cachaça producer in the Salinas region, continuing the Olímpio family legacy. Cachaça Saliníssima Prata adheres to a traditional recipe using rustic, wild yeasts and natural elements during fermentation. Aged for six months in stainless steel tanks, it has a 40% alcohol content and is perfect for caipirinhas and other cocktails. It presents an aromatic profile with evident sugarcane sweetness and a noticeable alcoholic presence.
