Roulaison Distilling, a New Orleans rum producer, began operations in late 2016. The name "Roulaison" refers to the sugarcane harvest in French-Creole. The distillery specializes in a rum-making style that predates industrial methods, utilizing pot stills and producing in small batches. Their limited edition Rhum Agricole is crafted from fresh-pressed sugarcane juice that undergoes a wild fermentation process. It is bottled at 50% ABV.
