This whiskey is truly remarkable. Congratulations to the Roughstock team. I'm eager to explore more of their offerings. Nose: Incredible. Evokes a dry brushfire. Smooth caramel and toffee that intensify over time. Butter tarts and unbaked pastry (salty dough). Dark fruits and pepper. Cinnamon and other spices. Orange, apple, and pear. A subtle char, a smoky hint. Palate: Exhibits a bit more youth, though it's still not a 'young' spirit. Amazing! Toasted oak. Apple skins, ginger, pepper, and sharp clove or cinnamon. Moist dried fruit. Burnt sugars or very dark caramel. A hint of what I perceive as caramelized orange peel. A long finish with green apple skins and oak notes. Thoughts: This is a robust spirit that would appeal to many individuals. Priced over one hundred dollars, but I would gladly purchase it again.
