Dunnet Bay Distillers, established in 2014 by Martin and Claire Murray, is located at Dunnet Head in northern mainland Scotland, making it Britain's most northerly mainland distillery. Their initial product, Rock Rose Gin, is crafted with botanicals like juniper, rose root, sea buckthorn, rowan berries, blaeberries, cardamom, coriander seed, and verbena, many sourced from Scotland. After vapor distillation with the base spirit in the copper pot still named "Elizabeth," the gin is bottled at 41.5% ABV.
