About this bottle

Appalachian Gap Distilling, located in Middlebury, Vermont, produces Ridgeline Vermont Whiskey. The mash bill consists of 45% barley, 30% corn, and 25% rye. The whiskey is aged for a minimum of nine months in both new and used barrels and is bottled at 49% ABV.

The nose has a youthful but pleasant combination of earthy rye, barley, charred oak, some sweetness, and just a hint of vanilla and caramel. It all comes together well, though it's a bit softer than you might expect given the lovely notes detected. It becomes mellower and creamier as it airs, making it more appealing. The palate is very gentle yet delivers a slight kick of rye spice, followed by a grainy barley character. The mouth warms as dry oak washes over, with faint hints of wine sweetness appearing last, which come across as a bit too subdued. The creaminess from the nose doesn't quite carry over, but it's not missed as this whiskey is quite enjoyable as is. It eventually blends together, pleasantly reminiscent of dark chocolate. The finish is short to medium, with a sharp and spicy dark chocolate mixed with oak and rye that fades, with everything else disappearing before you know it. This whiskey has a lot of potential with a bit more aging, perhaps a bit more proof. I would definitely keep it on my shelf, only regretting not making a cocktail with it before finishing the bottle.

Rye and grassy notes upfront, which was unexpected after a honey aroma with some apple. It has a pleasant, smooth, but brief finish.
