Surprisingly clear and distinct mushroom flavor in the gin, presented oddly well. Earthy and much spicier than anticipated... A bit intense for sipping neat, but truly excellent in cocktails. Special shout-out to the pickled beet gin sour featured in the Quebec Gin Guide!
