Port Chilkoot Bourbon is processed through fermentation and distillation in a copper pot still, followed by aging in two-barrel batches. Heather Shade and Sean Copeland own the distillery, which is situated in Haines, Alaska.

Tasted initially at the Anchorage Brewhouse on Father's Day. For a new Distillery, this is a remarkable product. It's incredibly smooth with good viscosity. You get the sweetness from the Corn, softened by time in the barrel, with notes of vanilla and caramel. There's a whisper of cherry and a faint taste of licorice, concluding with a pleasant warmth that stays with you. If a bottle is available, get it. I managed to locate one after some effort. A solid four stars, or 86 out of 100.

Tastes just like the description when sampled straight. A good kick on the palate and a pleasant finish. Stonefruits and vanilla are well-represented. Diluting with water brings out the vanilla and softens it slightly, while the heat remains. It might be tough to locate outside of Alaska, but it's worth seeking out if you find it!
