About this bottle

This limited edition rum was created in 2009 at South Pacific Distillery using molasses that underwent a 4- to 5-day fermentation. It was distilled using both copper pot and column stills, then matured for 7 years in ex-bourbon casks. Subsequently, it was transported to France for an additional 2 to 3 years of aging in ex-Ferrand cognac casks. A dosage of cane sugar caramel E15oa, ranging from 0% to 0.1%, was incorporated before its 2019 bottling at 44.8% ABV.

Imogene Craft 3.3

This is quite spicy, with considerable bitterness and a strong hogo. It also has a somewhat meaty character. The palate is remarkably rich with full-bodied flavor. While it can be intense, closer attention reveals developing flavors like vanilla and butterscotch, alongside unusual hints of Cheetos and grainy notes (wheat and rye). There might be a faint corn or banana essence, but it's minimal. The spices evoke a Christmas feel, with clove being the most dominant. Fruit notes are suggested but very subtle. The alcohol is detectable but largely masked. The intense hogo is very strong, and while I appreciate the present complexity, the balance is off. This falls in the 15 to 16 range.

A delightful sipping rum with no added sweeteners. The nose offers wine-like, cognate-derived tannins, distinct sweetness, and hints of vanilla and coconut. The taste begins light with tropical fruit and citrus, then the body emerges with some warmth and notes of dry raisin and apricots; the warmth is quite pleasant. The finish is surprisingly sweet and dry at the end. I appreciate the lightness and complexity of this rum.

Amazing aroma, deeply layered with vanilla, dehydrated bananas, strong funk, papaya, wood, tart cherry, and mulling spices. Entry on the palate is smooth, then rapidly becomes sharp and tingly on the tongue. Flavors include vanilla, dulce de leche, pepper, and subtle tropical fruits. Disappointing compared to the nose, yet still enjoyable. The finish is extended, zesty, and heats the throat, concluding with a pleasant hint of chocolate.

This possesses an astonishing resemblance to a single malt scotch. Remarkably distinctive and pleasantly surprising, especially considering the Plantation label.

Demetria Brinson 4.0

Fruity with some funk, intensely banana and cognac. The finish is long, and the cognac influence from the aging is evident on the palate.
