The Reserve bottling from Pierre Ferrand is an average of 20 year old cognac. Their eaux-de-vie are aged in 270-liter Limousin oak barrels. All of their products feature grapes sourced exclusively from the Grande Champagne region, the premier cru. Ferrand distills its eaux-de-vie on the lees, a practice they choose to employ. The lees, which are retained after unfiltered fermentation, help capture and hold more aromas compared to distilling without them.
