Light. Lively. Delicious. It drinks like a high-quality cognac with a hint of apple. It's almost as if applewood was used in the production process or it was infused with apple rather than being distilled from it. Also notes of walnut skin, peach, smoke, and char. Very flavorful with a pleasing burn at the end that I appreciate.

About this bottle
Located in Soquel, Northern California, Osocalis employs French distillation traditions and methods. Owner and master distiller Dan Farber, who studied brandy making extensively in France and elsewhere, established Osocalis in the early 1990s, focusing solely on brandy production. This bottling utilizes a small alembic still and incorporates over a dozen apple varieties from northern California, with an aging period of 15 years.
