Nose: A nose with noticeable proof. Sweet, nutty, oak, and hints of raspberries can be found underneath. Palate: Dark chocolate, sweet oak, brown sugar Finish: Medium, the sweet oak remains at the end It's quite uncommon for a pour to feel hot in a pleasant way. Even though this is only 90 proof, this bourbon has a longer finish than I would anticipate, as well as a kick that reflects its balance rather than raw proof. It's delicately balanced with sweet and oaky notes. Surprisingly more complex than I thought it would be, this sat on my shelf for a while, but I'm pleased I reconsidered it. A nice sipper for when you have the time to sit and enjoy it.

Oola Distillery, situated in Seattle's Capitol Hill neighborhood within a small, unassuming building, crafts the Oola Waitsburg Bourbon. The C American Whiskey represents the inaugural release in their Whiskey Discourse Series, an experimental line designed to foster discussions about unconventional whiskey aging and blending techniques. This particular whiskey begins as their standard Waitsburg Bourbon, made from a mash bill of corn, rye, malted barley, and wheat. It spends 4 years aging in new American oak before a 9-month finishing period in French oak barrels previously used for Cabernet Sauvignon.

Grain aroma, unassuming. Almost floral. Sweetness from the wine with abundant oak. Strong finish, high proof burn. Fruity sweetness right at the start that quickly fades into the wood. Stunning flavor, though.
It's quite palatable and a thoroughly enjoyable spirit for sipping. The influence of the wine barrel aging is certainly detectable, but in a pleasing manner.
