This certified organic cachaça, a special 2016 release, is produced at a zero-waste facility near Brazil's Atlantic Rainforest. Novo Fogo Graciosa Cachaça is blended and bottled at 42% ABV. It undergoes double barreling, aging for 2 years in used oak before an 18-month finish in Brazil nut (castanheira do Pará) barrels. The Brazil nut tree is one of the oldest and largest trees in the rainforest, with diameters exceeding 3 feet and lifespans of 500 years or more.

I just sipped this sample I had, which I hadn't gotten around to trying yet. My eyes widened, and I audibly exclaimed, 'wow.' Light and vegetal but buttery, with some red hots, fruit pudding, and a bit of pie crust. Truly delicious.
