This molasses and cane sugar rum from the founders of New Holland Brewery / Distillery in Holland, Michigan, undergoes on-site fermentation, double pot distillation, and is then matured for six months in wine, whiskey, and fresh casks. It begins delicately with hints of oak, caramel, vanilla, apple, and a touch of tropical fruit. Its rich and complex life develops notes of dark sugar, caramel, dried fruit, wine, and oak spices, culminating in a long, creamy finish with fruit, spice, and caramel flavors. January 2021
