Mosswood sources its whiskeys from other producers, subsequently finishing them in distinctive barrels in Berkeley, California. The whiskey used for this expression is a light spirit, predominantly corn-based, originating from Indiana and aged for seven years in used bourbon casks. Mosswood then transfers this whiskey into a barrel that previously contained locally brewed sour ale. For clarification, a "light whiskey" is distilled between 160 and 190 proof, whereas bourbon cannot exceed 160 proof during distillation. It can be aged in either used oak barrels or uncharred new oak barrels.
