Aging LSM Aether in former port wine and former Islay single malt barrels alters its character significantly from the original coniferous, fresh, and pepperminty notes. It introduces more caramelized fruit and spiced wine on the nose. The initial taste is somewhat muddled, becoming distinctly peaty upon swallowing, and it concludes with a dark chocolate and coffee aftertaste, featuring hints of juniper throughout. It's quite intriguing neat but is less impressive with ice or tonic. The batch I sampled was number 2, with an ABV of 48.8%. This can differ between batches.
