About this bottle

Following an extensive fermentation process utilizing yeast typically reserved for brandy or wine, this whiskey undergoes distillation in an antique Cognac still measuring 16 hectoliters (approximately 420 gallons). Rainwater is employed to adjust the whiskey's proof. The grain bill consists of Bavarian hard wheat, and the spirit is matured for 357 minutes in oak. Crispin Cain, the distiller, is also recognized for his work with the Germain-Robin brandies.

This exceeded my expectations significantly. Notes of plum/prune and toffee on the nose, along with almond paste. This might be the first time I've ever identified stewed apples, but it's present. The palate is clean, fresh, and fruity (reminiscent of ripe nectarines or peaches with a citrus hint). A gentle black pepper note appears on the short finish, less so than many others. It has about two-thirds the pepperiness of Toki. It's difficult to articulate because it also possesses a 'new' character, yet it's clearly of good quality. I am genuinely enjoying it neat. Receiving 4 stars for surprising me with a white dog that is a pleasure to drink and learn from. I got an excellent price when a local shop cleared out its inventory, so keep an eye out wherever you are. It was a fantastic deal.

This young whiskey has a smooth taste. The nose suggests it might be potent enough to strip paint, but it goes down smoothly, offering hints of wood and spice on the palate. No need to add water or ice to enhance the flavor; it would only dilute this whiskey too much.
