Nose: Brown sugar and candied green apple, with coconut sugar on the finish. Palate: Sweet stone fruits from the PX sherry initiate the taste, quickly followed by green apples and a blend of tannins and strong oaky spices, including pink and black peppercorns. Finish: The bitter notes and pepper linger longer than anything else, though a honey crisp apple flavor emerges afterward. The pepper remains, but the other elements fade relatively fast. This tasting was done without water. However, with just a few drops, I found it reduced the tannins and pepper, allowing more of the sweetness to come forward.
