Lillet Rouge is less recognized than its famous predecessor, which is regrettable. While the Blanc is essential for cocktails and enjoyable on its own, the Rouge expression is better suited as a foundation for punches, spritzes, and other tall drinks. It's comparable to Italian aperitifs like Aperol and Select, but its base of full-bodied red wine gives it a richer, more sophisticated character. It also shares similarities with Dubonnet and Byrrh. When used as a base for long drinks, it resembles Lambrusco, sweet moscato, Sangria, and other light summer wines and punches. It pairs exceptionally well with red meat, especially grilled items on a warm afternoon. Lillet Rouge is excellent served straight over ice with an orange slice as a refreshing pre-dinner drink, and it mixes wonderfully with tonic for a longer beverage (much like Lillet Blanc). For those who prefer sweeter drinks, consider using sparkling lemonade instead of tonic for a very easy-drinking cooler, but if that's too sweet, try soda water in various forms. I've found Fever Tree Elderflower Tonic to be a fantastic match. Incidentally, if you're conscious of your calorie intake and seeking a long, spritz-like summer cooler, it's worth noting that the inherent bitterness of Lillet Rouge effectively masks the taste of artificial sweeteners in sugar-free lemonade.
