A complex, sweet, herbal aperitif or cordial from France. It's an old-fashioned white absinthe based on a French recipe from the 1800s, created in collaboration with the French Absinthe Museum. The clear color is reminiscent of the days of prohibition when green spirits could be easily detected. It has an aromatic beginning with notes of herbs, peppermint, cardamom & cinnamon; its herbal character continues with notes of fresh flowers, star anise, fennel seed & parsley, leading to a long & spicy conclusion.
