A sophisticated, certified organic and kosher Barrel Aged Dry Gin from Koval Distillery in Chicago, Illinois. It's made with the same cherished recipe as the Dry Gin, aged in Koval's former whisky casks and bottled at 94 proof. It starts aromatically with notes of berries, wood, flowers, herbs, and spices. A somewhat creamy middle adds notes of caramel, honeyed thyme, coriander, and rose, leading to a balanced, medium-length finish with notes of charred oak, vanilla, and nutmeg.

Koval's Barreled Gin, introduced in the spring of 2016, is a recent addition to their extensive product line. As a grain-to-glass producer, Koval enjoys experimenting and pushing creative boundaries. This gin is aged for six months in barrels that have previously held Koval's whiskey.

The aroma hits you with botanicals, indicating it's a gin with a slight burn. Upon tasting, it reveals its true nature, with a good amount of orange bitters alongside the spice from aging. I found its development to be somewhat brief, but its surprising and unexpected taste is a definite highlight.
A clean, crisp taste of pine and juniper. The aging process results in an amazing sweet floral flavor. I love it!
This is good, but St George, Barr Hill, and Ransom create better gin-whiskey, gwhiskey, and game styles.
