Although identified as "Japanese Gin," this expression is actually produced at the Cambridge Distillery, a small, family-operated distillery in England. The name originates from the traditional Japanese botanicals utilized in its creation. Six botanicals—juniper, shiso leaf, sesame seeds, cucumber, sanshō, and yuzu—are individually infused into the base spirit before being combined to form the final product.

This gin from Cambridge Distillery, made with traditional Japanese elements like Shiso leaf, Sanshō spice, and Yuzu, is well-rounded. It also includes cucumber and sesame seeds, common in Japanese cuisine, alongside the essential juniper. Each botanical is distilled separately by hand under vacuum in small batches, then blended and distilled at low temperatures for maximum freshness. The initial aroma presents pepper, bright citrus, gentle herbaceousness, sweet floral hints, cucumber, and a touch of ginger. The middle palate is rich and refined, offering dry spices, more pure cucumber, berries, and a whisper of peppermint. The finish is balanced and medium in duration, featuring notes of lemon peel and woody/spicy juniper. January 2021
