Isle Of Wight Mermaid Spiced Rum

This Spiced Rum is a robust creation, using a mix of sugar cane and molasses rum originating from Trinidad and the Dominican Republic, and it was distilled using column stills. It was then flavored on the Isle of Wight with aromatic rock samphire, bright white cherry and apricot, honey from onsite beehives, and black salt gathered from floodtides. Mildly spiced with indigenous holy grass, cassia, and vanilla. It was subsequently matured for 2 to 5 years in oak bourbon whiskey casks prior to bottling at 38% ABV. The aroma presents a fragrant beginning with hints of cane, molasses, fruit, botanicals, and spices; a rich and intricate journey concluded with a spicy finish of moderate duration, featuring a hint of sea salt caramel.
