A rum aged for 2 years in bourbon barrels from South Pacific Distilleries. Highly estery, with an aroma of ripe banana and rubber. Medium mouthfeel, no ethanol burn, notes of banana peel, a hint of caramel, with subtle herbal/mint flavors on the finish. On the surface, it bears a slight resemblance to an estery Jamaican rum, but with a subtle herbal essence. Comparing it side-by-side with the Transcontinental Rum Line Fiji 2014 from the same distillery. I find the Holmes Cay to be superior.
