About this bottle

Brunnur Distillery in Reykjavik, Iceland, produces Himbrimi Old Tom Gin. Óskar Ericsson, an Icelandic artist and entrepreneur, originally created it as a drink to enjoy while flyfishing along the eastern coast of Iceland's Westfjords. The gin is made with Icelandic spring water, organic juniper berries, wild angelica flowers, and wild Arctic thyme. After infusing the botanicals into a grain spirit, the gin undergoes filtration and is sweetened with organic honey. The United States debut begins in September 2022 in the New York market, with other regions to follow later in the year.

Beautiful amber color from the addition of honey. Aromas of juniper berries, honey, slightly burnt fir branch, a hint of Canadian whisky cask caramelization, and sweet herbs. On the palate, it's surprisingly full-bodied. Not the typical gin taste, but a presence of well-dried orange peels, burnt honey, and bitter white grapefruit. Some fir and small northern bud flavors also come through. The texture is a bit aggressive, but I'm eager to try it in a gin and tonic. I suspect the flavors will complement each other well.

Rose water, rose petal, juniper and a honeyed sweetness! Very herbal otherwise and the whole thing is very different from what's commonly found! Very happy with this memory from Iceland!
