Georgian Bay Whisky

Nose: Aged caramel with light butterscotch notes, creamy yellow corn, overripe golden yellow apples, old charred wood sweetness, sugary sweetness, rich cinnamon, a little vanilla, a slight floral brightness like eau de toilette, peanut brittle, coffee crisp and mocha, a hint of green rye spice, a hint of sticky toffee, orange zest, pine sol, lemon liqueur (limoncello), lemon antiseptic, white vanilla blossoms, some ripe pineapple, cornbread, pound cake, carrot muffins, corn husks, black pepper, white cranberry preserves, a slight hint of apricot. Palate: Candy corn sweetness, a touch of sweet honeydew, bittersweet green bell pepper, cinnamon and cayenne pepper, spicy black pepper, candied orange peel, aged liquid caramel, simple syrup, light aged sweet and spicy oak, a touch of peppermint, a bit of lemony sweet tea. Finish: Sweet tea and aged oakiness, old toffee, processed corn, zesty/spicy cloves, black pepper, spicy rye, tangy orange zest.

The aroma is vibrant, fresh, and almost briny. Vanilla, butterscotch, caramel, honey, green apple, and floral potpourri fill the nose, followed by black pepper and rye spice. On the palate, the vanilla, butterscotch, and caramel are noticeable, with black pepper hitting the back of the throat and coating the tongue. The brightness perceived in the aroma is very much present in the taste, leading to a medium-length finish that could benefit from a higher proof for more vibrancy. This is a complex and very enjoyable sip all around. The flavors would likely work very well in an Old Fashioned. Quite nice.
