Sweet aroma, with a touch of banana. The flavor hits the middle of the tongue, smooth and slightly peppery. It goes down smoothly, warm but not hot. No bitter aftertaste. It's not the absolute smoothest, but the taste is good. Bought this at the distillery while returning from the falls.

About this bottle
Locally sourced grains form the mashbill: 70% corn, 15% rye, and 15% barley malt. This New York distillery is also involved in brewing beer and producing wine under the Mazza Chautauqua Cellars brand. Additionally, they create various spirits and cordials, such as limoncello and eau-de-vie. Their bourbon whiskey matures for 2 years in small, charred American white oak barrels. Batch 01 was used for this evaluation.

Amber, legs. Oak. Dry, oak, mild cream, brown sugar, mild spice (black pepper). Medium-light body, medium burn, astringent, medium caramel finish. Quite dry and harsh. 70% corn, 15% rye, 15% barley 2 years
The flavors are subdued, reflecting the immaturity of this bourbon. It's merely acceptable.
The flavor and balance were highly impressive.
