Alex Nicol, co-founder of Edinburgh Gin, aimed to create a gin celebrating Scotland's native botanicals. Master distiller David Wilkinson explored the east coast of Scotland for inspiration. Initially a limited release, Edinburgh Seaside Gin is now a core offering. It features traditional gin botanicals like grains of paradise, coriander, and cardamom, combined with foraged Scottish plants such as scurvy grass, ground ivy, and bladderwrack. The gin is bottled at 43% ABV after distillation.

Clear. Dried herbs, mild seaweed, typical spices. Salty, slightly savory. Medium-light body, smooth, a short herbal finish. Pairs well with a mild tonic, like Fever-Tree Mediterranean, or try it in spirit-forward cocktails with subtle mixers, such as a dry martini: it offers salinity without being overpowering.
An overall light profile featuring juniper, a subtle freshness, a touch of spice, some sea air and saltiness indeed. Minerality and slight spiciness remain when mixed with tonic. It's agreeable all in all, though I would have preferred a more pronounced maritime character.
Unremarkable, but performs well served neat or in a martini. It just seems very average to my preferences though, doesn't seem to sell well in my region as it's always on sale / discounted.
Mixed with Mediterranean tonic. Made with seaweed. Fever-tree tonics Lemon tonic: Like lemonade. Can nearly drink it straight. Elder flower: Sweet. Good. Mediterranean: Refreshing. Good.
Nose: cardamom, juniper, peppercorn, salty air, lemon peel. Mild palate; some pepper, salt, a hint of citrus. Short finish.
An interesting experiment with uncommon botanicals, but not to my taste; it's salty, not quite dry or robust.
