Dry Fly Straight Wheat Whiskey Port Barrel Finish 3 Year

I have gradually sampled Dry Fly's offerings over time during trips to the Pacific Northwest. Their company ethos and principles are appealing. Regarding this particular bottle. The aroma presents sweet grains, light, and floral notes. On the palate, there's sweet cereal, green apple, followed by the emergence of red wine tannins. The body is smooth and light, fitting for a wheat whiskey, and it possesses a ruby red color. The brief finish transitions into a tannic aftertaste. Adding a bit of ice melt causes it to open up and soften. It's an improvement over their standard wheat whiskey, but I believe barrel aging duration is the most significant factor in enhancing their superior whiskeys (though 4-5 years seems to be the limit for Dry Fly). This expression has the usual 3 years plus an additional 6 to 12 months in port casks. I am hopeful they will establish 4+ years as their minimum aging period and extend it further. The 5-year Triticale port cask whiskey was considerably better than this, but triticale isn't solely wheat, and that was a limited run. Perhaps my assessment of their straight wheat whiskey was higher when I first tried it in 2013, considering it at the time as a quality product from a nascent distillery. However, with an additional year in port wood and seven more years of experience, I anticipated more from this version. To be precise, this is indeed a fine wheat whiskey, easy to drink, but somewhat lacking in body for cocktail mixing. I simply wished for a more profound experience. UPDATE July 2021: Check out Dry Fly's new black bottle release, a small batch straight wheat whiskey aged 6 years, finished in port barrels (possibly Townshend Huckleberry Port from WA?), bottled at 45% ABV. It's pricey, but this is the direction they should be heading.

Disappointing. The Triticale was absolutely amazing. This drink totally fails and lacks character. Even the port cannot salvage it. I won't purchase this again. If given the option, I would request a standard bourbon instead.

Nose: Noticeably sweet, with caramel notes. Palate: Nutty, caramel, and creamy. Finish: A citrusy, bitter, and spicy aftertaste.

A very smooth wheat spirit, but definitely not 'wheaty' tasting to me. Perhaps a subtle vanilla note that smooths out as you enjoy the sip. Cheers!

Initially, there are berry and wheat notes. The first taste brings smooth vanilla, cherry/fruit flavors, and a lightly spiced end.

Smells sweet, with a fantastic flavor and end. A touch too sweet for a Port whisky. A flawless choice for a weekend drink.
