Dry Fly Straight Wheat Whiskey Port Barrel Finish 6 Year

Acquired at the distillery shop in Spokane, WA in April 2021 for $80. This black bottle contains a limited production, small batch straight wheat whiskey, aged for 6 years and finished in port barrels (possibly Townshend Huckleberry Port from WA?), bottled at 45% ABV. The liquid is auburn, visually appealing, and has a medium body. The nose offers apples, grapes, and sweet cereal. Oak and vanilla lead the taste, followed by caramelized sugar, cereal, and fruity sweetness. It has a soft, round, and clinging mouthfeel. A slightly astringent mint tingle emerges in the long, slow finish. It becomes smoother and softer with a little ice or water. This demonstrates what happens when Dry Fly ages their wheat whiskey beyond 3 years; it's impressive, though pricey, a mature and beautiful port-finished whiskey. I hope they can extend the aging for more of their distillate and reduce the price. Perhaps their new downtown Spokane distillery will facilitate this.
